Sandesh is a bengali sweet which is famous all over.sandesh sweet recipes of Bengali cuisine that is very easy to make and allows you to give it your ... just kneading up the basic ingredients sugar, chena (paneer) and cardamom powder.
Ingredients:
500 ml milk
lemon - 1 medium
Green cardamom powder 3 tbsp
Powdered sugar up to taste
Pistachios blanched and chopped
Method
Heat the milk in a pan until just before it boils..then turn off the heat
Add lemon juice.
Stir milk constantly while adding lemon juice..the solid curds will separate from the liquid whey
Place the cotton or muslin cloth in a strainer..and strain out the whey from curds
Rinse the paneer or Cottage Cheese with water...it will help to remove the sourness of chena...
Allow it to for at least 30 minutes
Now knead the paneer with the palm of your hand for about 5-7 min.
Mix in the sugar and knead again for 7 min till the sugar and chena are mixed well
Add the mixture in a pan.
Place the pan on a medium-low flame, folding the doughy mixture continuously for 4-5 minutes.
When the mixture becomes slightly more solid in texture, splash the rose water on it and remove the pan from the heat.
Allow the mixture to cool.
Add cardamom powder and mix until smooth dough is formed
Make small balls out of the dough and put a little bit of pistachio on top of each Sandesh
Chill for few hours and serve.
