HOW TO MAKE PANTUA?/indian sweets/bengali sweet dishes
Today I'm going to share the recipe of Pantua. Pantua is another popular sweet in BENGAL. how to make Pantua, Pantua Recipe, Pantua preparation, ingredients and cooking method
Ingredients:
1 litre milk
1 lemon
2 cups sugar
1 cup water
1 1/2 tbsp flour
Khoya - 1 cup
Baking powder - 1 pinch
1/2 tsp cardamom powder
1 tsp ghee
a pinch of baking soda
make Chena / cottage cheese
Method
Making the Chhana or Cottage Cheese

Heat the milk in a pan until just before it boils..then turn off the heat
Add lemon juice.
Stir milk constantly while adding lemon juice..the solid curds will separate from the liquid whey
Place the cotton or muslin cloth in a strainer..and strain out the whey from curds
Rinse the CHANA or Cottage Cheese with water...it will help to remove the sourness of chena...
Allow it to for at least 30 minutes
make sugar syrup
heat a pan with 3 1/2 cups of water and 2 cup sugar .1/2 tsp cardamom powder Stir it continuously till sugar dissolves completely Bring it to boil.boil it for 5-6 mins.No need to make any string syrup
1. Smash the Khoya on a flat surface till it becomes smooth. Smash the Chhana same way once it becomes very smooth and oily.
2. Add the baking powder, flour, cardamom powder and ghee (clarified butter) in the chhana and again knead it.
3. Add the smashed khoya and mix it together with the chhana. Knead it well with your palm till there would be no lump in it.
4. Let the dough rest for 10 minutes. Now make 20 equal sized balls out of the dough and give them a smooth shape.
5. Next heat up the oil for deep frying in a wok on high heat and then set to low heat. There should be enough oil in the wok to submerge the pantuas.
6. Test the oil with the first pantua to see if the oil is hot enough. The pantua should first sink and then rise and float. It usually takes a long time to brown on the low setting so you need to be patient here.
7. Once all the balls are fried to a nice brown color take them out of the oil and allow to cool for 10 mins.
8. next fried balls into the syrup and boil for 1-2 mins and then leave in the wok to soak up the
"syrup"!
